so i restarted my pkmn crystal and this is my actual party.
lv51 @leftovers

-Metal Claw (don't remember how long it takes to get steel wing)
-Swords Dance
-? (current is false swipe to complete the pokedex)
i dunno how to complete the set HP is flying; so much for the HP Bug... maybe return??

-Dynamicpunch (i PP up maxed it, still not really reliable... should i put a magmar in here?)

Doesn't get steel wing though level up. TM only. You could go with return in the last spot, as it is too slow for reversal. Consider not keeping this.

He's in Goldenrod outside the game corner, on sundays and wednesdays. mornings I think. Anyway, sunny day > dynamic punch - you hit rocks hard enough with Earthquake.

Great, so you couldn't get the extremespeed one to be shiny? lol, anyway...even though extremespeed is cool, physical dragonite is not good. So, he's mixed...

T-tar looks decent - some like Curse > Crunch, but I find that the speed actually gives him a slight edge. Its also nice to have a reliable anti-ground move against Donphan.
Umbreon - Curse / Charm, Mean Look, B-pass, Rest. Notice that charming really helps make the passing a bit easier. Note that If you pass curse to ES Arcanine, that would be great as Extremespeed nullifies the speed drop.
Snorlax - Good old curselax. You're good until Skarms/Forry screws you over.
Exeggutor - See, this is sort of why I prefer Jynx - the more accurate sleep move, and better STAB in terms of power, pp, and type coverage... Anyway - Eggy is a Psychic with Attack power, and explosion is base 250, with a halving of Def leading to 500 base. I'd love to say replace Leech seed, but that in and of itself is good. A miracle berry could prove useful with Giga Drain.
I personally use Eggy for stalling - Leech Seed, substitute, protect, and Psychic/Mega Drain (PP).
Arcanine - Go with extremespeed and you'll be fine. You could replace this with Charizard, who at least gets EQ and Rock Slide.
Starmie: Recover is your best bet.
You have a real problem - I'd actually replace Umbreon or Eggy with something that can really pack in damage. Gengar is really good - T-bolt, Psychic, Ice Punch, and either Hypnosis or something.
I actually have not played GSC for a while, so I'm a little unsure.

Turaga: Everything is standard here. Do not use the blackbelt/nevermeltice/that kind of item. Go leftovers on everything. Do the cloning trick. And keep recover on Alakazam.

Currently I'm looking for opinions as to whether "Sleep Talk" would be better than "Snore" for Snorlax. Also wondering about whether Dragonite should have "Thunderpunch" or "Ice punch", and some alternatives for Wing Attack/Twister. Jolteon really has a couple of weak moves in there also.
EDIT: Perhaps Flash, Rain Dance or Shadow Ball for Jolteon.

typhlosion doesn't need two fire moves, so I would switch flame wheel for thunder punch, and cut is very weak, but I doubt you can undo that, so I'll move on
Lugia: zap cannon is horribly inaccurate, so I would switch it with aeroblast for a stab
Aerodactyl: fly is a bad move, and you only need one flying move, but I don't think you can undo that, so I would lose the wing attack, and add earthquake
Snorlax: lose snore, and add earthquake, and then you might even want to switch hyper beam for shadow ball, but it's up to you
Jolteon: keep double kick, but lose iron tail to add shadow ball
Dragonite: outrage/dragon breath, wing attack, blizzard, surf/fire or thunder punch (what ever you feel your team needs)

to answer your question about vitamins, it is 10 vitamins total, so 3 carbos, 4 zinc, and 3 protein is maxed out
