EV Training a Pichu?

So I got a Pichu from the Trophy Gardens in Pokemon Diamond. I'm still new to the whole "EV" training thing so I picked Pichu as my guinea pig for my first pokemon to EV train.
But I read the guides on here and some other guides on other sites and I still don't understand EV training, can someone explain it to me? |
